Crispy Herb-Infused Roasted Potatoes

Golden, crispy roasted potatoes infused with fragrant herbs, perfect as a flavorful side dish for any meal.

  • 2 pounds baby potatoes, halved
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 2 cloves garlic, minced
  • Optional: fresh parsley for garnish

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, toss the halved baby potatoes with olive oil, salt, pepper, rosemary, thyme, and minced garlic until evenly coated.
  3. Spread the potatoes out in a single layer on a baking sheet.
  4. Roast for 25-30 minutes, turning halfway through, until potatoes are golden and crispy on the edges.
  5. Remove from oven and garnish with fresh parsley if desired.
  6. Serve hot as a delicious side dish.

Notes

For extra crispiness, soak the potato halves in cold water for 30 minutes before seasoning and roasting.
