Creamy Tuscan Chicken is a rich and flavorful dish featuring tender chicken breasts in a garlicky sun-dried tomato and spinach cream sauce, perfect for a comforting Italian-inspired meal.

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh baby spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Season the chicken breasts with salt, pepper, and dried oregano on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes on each side, or until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. In the same skillet, add the minced garlic and cook for about 1 minute until fragrant.
  4. Add the cherry tomatoes and sun-dried tomatoes; sauté for 2-3 minutes until softened.
  5. Reduce heat to medium and stir in the heavy cream, Parmesan cheese, and fresh spinach. Cook until the spinach is wilted and the sauce thickens, about 3-4 minutes.
  6. Return the chicken breasts to the skillet and spoon the sauce over the top. Let everything simmer together for 2-3 minutes to meld the flavors.
  7. Garnish with fresh basil leaves if desired and serve warm.

Notes

For an extra touch of flavor, serve with garlic mashed potatoes or crusty Italian bread to soak up the delicious sauce.
