  • 1/2 cup dried cranberries, chopped
  • 2 tbsp fresh chives, finely chopped
  • 1 tbsp honey
  • 1/4 tsp black pepper
  • 1/4 cup chopped toasted pecans (optional)
  • Crackers or sliced baguette, for serving

Instructions

  1. In a medium bowl, mix the softened goat cheese, honey, and black pepper until smooth and creamy.
  2. Gently fold in the chopped dried cranberries and fresh chives.
  3. Place the mixture onto a sheet of plastic wrap and shape into a log about 6 inches long.
  4. Wrap tightly and refrigerate for at least 2 hours to firm up.
  5. Before serving, roll the log in chopped toasted pecans if desired, pressing gently to adhere.
  6. Serve chilled with crackers or sliced baguette.

Notes
