Cottage Cheese and Chickpea Salad

A refreshing and protein-packed Cottage Cheese and Chickpea Salad that’s perfect for a healthy lunch or light dinner.

  • 1 cup cottage cheese
  • 1 cup cooked chickpeas (or canned, drained and rinsed)
  • 1 small cucumber, diced
  • 1 small tomato, diced
  • 2 tbsp red onion, finely chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine the cottage cheese and cooked chickpeas.
  2. Add the diced cucumber, tomato, and red onion to the bowl.
  3. Drizzle the lemon juice and olive oil over the mixture.
  4. Gently toss everything together until well mixed.
  5. Season with salt and black pepper to taste.
  6. Sprinkle chopped fresh parsley on top as garnish.
  7. Serve immediately or chill for 15 minutes for a refreshing taste.

Notes

For added crunch, sprinkle some toasted sunflower seeds or walnuts on top before serving.
