  • 6 slices bacon, diced
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups Yukon Gold potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup milk
  • 4 ounces cream cheese, softened
  • 2 tablespoons butter
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, or to taste
  • 1/4 cup chopped fresh chives, for garnish
  • Shredded cheddar cheese, for garnish (optional)
  • Sour cream, for garnish (optional)

Instructions

  1. In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, reserving the bacon grease in the pot.
  2. Add the chopped onion to the pot and cook in the bacon grease until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more, until fragrant.
  3. Stir in the cubed potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  4. While the potatoes are simmering, melt the butter in a small saucepan. Whisk in the flour until smooth. Cook for 1-2 minutes, stirring constantly, to create a roux.
  5. Once the potatoes are tender, use an immersion blender to partially blend the soup, leaving some chunks for texture. Alternatively, carefully transfer some of the soup to a regular blender and blend until smooth, then return it to the pot.
  6. Stir in the heavy cream, milk, and softened cream cheese. Add the roux and stir well to combine.
  7. Season with salt and pepper to taste.
  8. Heat through, stirring occasionally, until the soup is heated and slightly thickened.
  9. Ladle the soup into bowls and garnish with crispy bacon, chopped chives, shredded cheddar cheese, and sour cream, if desired.
  10. Serve immediately and enjoy!

Notes

For an extra creamy soup, use an immersion blender to blend the entire pot. You can also substitute milk for half-and-half for a richer flavor.
