This Coconut Almond Chocolate Pudding is a rich, creamy dessert blending natural coconut and almond flavors with smooth chocolate, perfect for a healthy indulgence.

  • 1 can (13.5 oz) full-fat coconut milk
  • 1/2 cup almond milk
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup maple syrup
  • 1/4 cup almond butter
  • 2 tbsp chia seeds
  • 1 tsp vanilla extract
  • Pinch of salt
  • Chopped toasted almonds for garnish

Instructions

  1. In a medium bowl, whisk together coconut milk, almond milk, cocoa powder, maple syrup, almond butter, and vanilla extract until smooth.
  2. Stir in chia seeds and a pinch of salt until fully combined.
  3. Cover and refrigerate for at least 4 hours or overnight to thicken.
  4. Before serving, stir pudding well and scoop into serving dishes.
  5. Garnish with chopped toasted almonds and serve chilled.

Notes

For extra richness, add a tablespoon of melted dark chocolate or a sprinkle of shredded coconut on top before serving.
