  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In a separate large bowl, cream the softened butter with granulated sugar and brown sugar until light and fluffy.
  4. Beat in the egg, then add vanilla and peppermint extracts; mix well.
  5. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  6. Cover the dough and chill for at least 1 hour to make it easier to handle.
  7. Roll the dough into 1-inch balls, then coat each ball generously in powdered sugar.
  8. Place the coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10–12 minutes until the cookies are set and crackled on top but still soft inside.
  10. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra festive touch, drizzle melted white chocolate over cooled cookies or add a few crushed peppermint candies on top while still warm.
