  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups mini marshmallows

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition, then mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually blend the dry ingredients into the wet ingredients until combined.
  6. Gently fold in the mini marshmallows, ensuring they are evenly distributed without melting.
  7. Drop dough by rounded tablespoonfuls onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are set but centers remain soft.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra gooey texture, gently press a few additional marshmallows on top of each cookie dough ball before baking.
