Chicken Pot Pie Orzo is a comforting, creamy one-pot dish that combines tender chicken, vegetables, and orzo pasta in rich pot pie flavors perfect for a hearty weeknight meal.

  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts, cubed
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 cup orzo pasta
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  2. In the same skillet, melt butter, then add diced onion and carrots. Cook until softened, about 5 minutes.
  3. Add garlic, thyme, and rosemary; sauté for 1 minute until fragrant.
  4. Sprinkle flour over vegetables and stir constantly for 1-2 minutes to form a roux.
  5. Gradually whisk in chicken broth, ensuring no lumps, then add heavy cream. Bring mixture to a simmer.
  6. Add orzo pasta, peas, and corn. Cook, stirring frequently, until orzo is tender, about 10 minutes.
  7. Return cooked chicken to the skillet and stir to combine. Season with salt and pepper to taste.
  8. Remove from heat and let sit for a couple minutes to thicken before serving.

Notes

For added richness, sprinkle shredded cheddar or Parmesan cheese on top before serving. This dish pairs wonderfully with a fresh green salad.
