Chicken Noodle Soup

Chicken Noodle Soup is a comforting classic made with tender chicken, fresh vegetables, and egg noodles in a flavorful broth, perfect for warming up any day.

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth
  • 2 cups cooked shredded chicken
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until fragrant and translucent.
  2. Add carrots and celery, cook for 5 minutes until slightly softened.
  3. Pour in chicken broth and bring to a boil.
  4. Add shredded chicken, dried thyme, salt, and pepper.
  5. Stir in egg noodles and cook until tender, about 7–8 minutes.
  6. Remove from heat and stir in fresh parsley before serving.

Notes

For extra flavor, use homemade chicken broth and add a squeeze of fresh lemon juice just before serving.
