Chicken Cacciatore is a classic Italian dish featuring tender chicken simmered in a rich tomato sauce with bell peppers, onions, and herbs for a comforting and flavorful meal.

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 (28-ounce) can crushed tomatoes
  • 1/2 cup dry white wine
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • Fresh basil or parsley, chopped for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken thighs with salt and pepper.
  2. Add chicken to the skillet, skin side down, and brown until golden, about 5 minutes per side. Remove and set aside.
  3. In the same skillet, add sliced onion and bell peppers. Cook until softened, about 5-7 minutes.
  4. Add minced garlic and cook for 1 minute until fragrant.
  5. Pour in white wine and let it simmer for 2-3 minutes, scraping up any browned bits from the pan.
  6. Stir in crushed tomatoes, oregano, thyme, and red pepper flakes. Season with salt and pepper.
  7. Return the chicken to the skillet, nestling it into the sauce. Reduce heat to low, cover, and simmer for 30-35 minutes until chicken is cooked through and tender.
  8. Garnish with fresh basil or parsley before serving.

Notes

Serve Chicken Cacciatore over cooked pasta, polenta, or crusty bread to soak up the delicious sauce. For added depth, marinate the chicken in white wine and herbs for an hour before cooking.
