This Chicken and Rice Bowl is a hearty and flavorful meal featuring tender chicken served over fluffy rice with fresh vegetables and a savory sauce. Perfect for a quick, comforting dinner.

  • 2 cups cooked white rice
  • 1 lb boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper, to taste
  • 1 green onion, chopped (for garnish)
  • 1 teaspoon grated ginger (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add diced chicken, season with salt and pepper, and cook until browned and cooked through, about 6-8 minutes.
  3. Add minced garlic and grated ginger to the skillet and sauté for 1 minute until fragrant.
  4. Add sliced red bell pepper and broccoli florets; cook for another 4-5 minutes until vegetables are tender-crisp.
  5. Stir in soy sauce and sesame oil, mixing well to coat the chicken and vegetables.
  6. Remove from heat and serve the chicken and vegetables over warm cooked rice.
  7. Garnish with chopped green onions before serving.

Notes

For added flavor, sprinkle toasted sesame seeds on top or serve with a side of pickled vegetables.
