Cheesy Ranch Potatoes and Smoked Sausage

Deliciously creamy and savory, Cheesy Ranch Potatoes and Smoked Sausage combine tender potatoes with smoky sausage and melted cheese for an easy, comforting meal.

  • 4 cups diced potatoes
  • 12 oz smoked sausage, sliced
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix
  • 1/2 cup sour cream
  • 2 tablespoons butter
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, melt butter over medium heat. Add smoked sausage slices and cook until browned, about 5 minutes.
  3. Add diced potatoes to the skillet and sprinkle with ranch seasoning mix, salt, and pepper. Stir to coat well.
  4. Cook potatoes and sausage together for 10 minutes, stirring occasionally.
  5. Remove skillet from heat, stir in sour cream and half of the shredded cheese.
  6. Transfer mixture to a baking dish and top with remaining cheese.
  7. Bake in the preheated oven for 15 minutes or until cheese is bubbly and golden brown.
  8. Garnish with chopped green onions before serving.

Notes

For extra crispiness, broil the dish for an additional 2 minutes before removing from the oven. Serve with a side salad for a complete meal.
