Cheats Chicken Laksa

A quick and flavorful cheats version of the classic Malaysian chicken laksa, combining tender chicken, fragrant spices, and creamy coconut milk for an easy weeknight meal.

  • 2 tbsp vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp laksa paste
  • 400 ml coconut milk
  • 500 ml chicken stock
  • 200g cooked chicken breast, shredded
  • 150g rice noodles
  • 100g bean sprouts
  • 2 boiled eggs, halved
  • Fresh cilantro, chopped (for garnish)
  • 1 lime, cut into wedges
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Sauté the onion and garlic until soft and fragrant.
  2. Add the laksa paste and cook for 2 minutes, stirring frequently.
  3. Pour in the coconut milk and chicken stock, bring to a gentle simmer.
  4. Add the shredded cooked chicken and cook for 5 minutes to warm through.
  5. Meanwhile, prepare the rice noodles according to package instructions and drain.
  6. Divide the cooked noodles into serving bowls. Ladle the hot laksa soup and chicken over the noodles.
  7. Top each bowl with bean sprouts, boiled egg halves, and fresh cilantro.
  8. Serve with lime wedges and season with salt and pepper to taste.

Notes

For extra heat, add a dash of chili sauce or fresh sliced chilies. You can also substitute the chicken with tofu for a vegetarian twist.
