Carrot Cake Bars

Deliciously moist carrot cake bars fresh out of the oven

Deliciously moist carrot cake bars made with fresh grated carrots and warm spices, perfect for a sweet snack or dessert on the go.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups finely grated carrots (about 3 medium carrots)
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup crushed pineapple, drained (optional)
  • 1/2 cup shredded unsweetened coconut (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×9 inch baking pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In a large bowl, beat eggs, granulated sugar, and brown sugar until smooth and creamy.
  4. Stir in vegetable oil and vanilla extract until combined.
  5. Gradually add dry ingredients to the wet mixture, stirring just until combined.
  6. Fold in grated carrots, nuts, pineapple, and coconut if using.
  7. Spread batter evenly into prepared pan.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool completely in the pan before cutting into bars.

Notes

For a classic touch, top with cream cheese frosting once cooled, or sprinkle with powdered sugar for a lighter finish.
