Comforting homemade Caramel Popcorn Balls

Delightfully sweet and chewy, Caramel Popcorn Balls combine crunchy popcorn with rich homemade caramel for a perfect snack or treat.

  • 10 cups popped popcorn (about 1/2 cup unpopped kernels)
  • 1 cup unsalted butter
  • 2 cups packed brown sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract

Instructions

  1. Pop the popcorn and place it in a large mixing bowl, removing any unpopped kernels.
  2. In a medium saucepan, melt butter over medium heat.
  3. Add brown sugar, corn syrup, and salt to the melted butter; stir continuously and bring to a boil.
  4. Let the mixture boil without stirring for 4-5 minutes until it reaches a deep amber color.
  5. Remove from heat and stir in baking soda and vanilla extract; the mixture will bubble up.
  6. Immediately pour the caramel sauce over the popcorn and gently toss to coat evenly.
  7. Allow the mixture to cool slightly until cool enough to handle.
  8. With buttered hands, shape the coated popcorn into balls about the size of a tennis ball.
  9. Place the balls on a parchment-lined baking sheet to cool completely and set.

Notes

For extra flavor, consider adding a sprinkle of sea salt on the popcorn balls just before the caramel hardens or mix in some chopped nuts for crunch.
