Cajun Chicken Pasta

A flavorful Cajun Chicken Pasta combining tender, spicy chicken with creamy sauce and perfectly cooked pasta for a quick and satisfying meal.

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 3 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 8 ounces penne pasta
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. Season chicken breasts evenly with Cajun seasoning.
  3. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes per side until cooked through and golden brown. Remove chicken from skillet and slice into strips.
  4. In the same skillet, add remaining 1 tablespoon olive oil. Sauté garlic, onion, and bell peppers until softened, about 4-5 minutes.
  5. Pour in chicken broth and heavy cream, stirring to combine. Let simmer for 3-4 minutes until slightly thickened.
  6. Stir in grated Parmesan cheese until melted and sauce is creamy. Season with salt and pepper to taste.
  7. Add cooked pasta and sliced chicken back into the skillet. Toss everything together to coat evenly with the sauce.
  8. Garnish with chopped parsley and serve immediately.

Notes

For extra heat, add a pinch of cayenne pepper to the sauce or serve with a sprinkle of crushed red pepper flakes.
