Buffalo Chickpea Wraps

These Buffalo Chickpea Wraps combine spicy buffalo sauce with hearty chickpeas and fresh veggies, making a flavorful and healthy plant-based meal perfect for lunch or dinner.

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup buffalo sauce
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 4 large tortillas or wraps
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup shredded carrots
  • 2 tablespoons ranch or blue cheese dressing (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss chickpeas with olive oil, buffalo sauce, garlic powder, smoked paprika, salt, and pepper until well coated.
  3. Spread chickpeas on a baking sheet lined with parchment paper.
  4. Bake for 20 minutes, stirring halfway through, until chickpeas are crispy.
  5. Warm the tortillas in a dry skillet or microwave.
  6. To assemble, place shredded lettuce down the center of each tortilla.
  7. Top with baked buffalo chickpeas, diced tomatoes, red onion, and shredded carrots.
  8. Drizzle with ranch or blue cheese dressing if desired.
  9. Roll up the wraps tightly and serve immediately.

Notes

For extra crunch, add sliced celery or cucumber to the wraps. You can also substitute buffalo sauce with barbecue sauce for a milder flavor.
