This Berry Croissant Breakfast Bake combines flaky croissants, fresh mixed berries, and a creamy custard for a delicious and easy morning treat that’s perfect for brunch or a cozy weekend breakfast.

  • 4 large croissants, torn into bite-sized pieces
  • 2 cups mixed fresh berries (blueberries, raspberries, strawberries)
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 2 tbsp unsalted butter, melted
  • Powdered sugar, for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. Tear the croissants into bite-sized pieces and spread half of them evenly in the baking dish.
  3. Scatter half of the mixed berries over the croissants.
  4. Layer the remaining croissant pieces and then the remaining berries on top.
  5. In a bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, and salt until well combined.
  6. Pour the custard mixture evenly over the croissant and berries in the baking dish.
  7. Drizzle the melted butter over the top.
  8. Let the mixture soak for about 10 minutes to allow the croissants to absorb the custard.
  9. Bake in the preheated oven for 35-40 minutes, or until the custard is set and the top is golden brown.
  10. Remove from oven and allow to cool slightly before serving. Garnish with powdered sugar if desired.

Notes

For extra flavor, add a cinnamon sprinkle to the custard mix or serve with a dollop of whipped cream or maple syrup.
