A simple and tangy balsamic vinaigrette that perfectly complements salads and roasted vegetables with a balance of acidity and sweetness.

Ingredients

  • 1/4 cup balsamic vinegar
  • 3/4 cup extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon honey or maple syrup
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a small bowl or jar, combine balsamic vinegar, Dijon mustard, minced garlic, and honey.
  2. Slowly whisk in the olive oil until the dressing is emulsified and well combined.
  3. Season with salt and freshly ground black pepper to taste.
  4. Let the vinaigrette sit for 10 minutes before serving to allow flavors to meld.
  5. Shake or whisk again before drizzling over your salad or vegetables.

Notes

For a creamier texture, add 1 tablespoon of mayonnaise or Greek yogurt. Store leftover dressing in the refrigerator for up to one week.
