Crispy on the outside and tender on the inside, these Baked Smashed Garlic Parmesan Potatoes are a flavorful and easy side dish perfect for any meal.

Ingredients

  • 1.5 pounds baby potatoes
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Place the baby potatoes in a large pot and cover with salted water. Bring to a boil and cook until tender, about 15 minutes.
  3. Drain the potatoes and let them cool slightly.
  4. Place the potatoes on a baking sheet lined with parchment paper and gently smash each potato with the bottom of a glass or potato masher until flattened but still in one piece.
  5. In a small bowl, mix olive oil, minced garlic, dried Italian herbs, salt, and pepper.
  6. Brush the garlic oil mixture generously over the smashed potatoes.
  7. Sprinkle the grated Parmesan cheese evenly on top.
  8. Bake in the preheated oven until golden and crispy, about 20-25 minutes.
  9. Remove from oven and garnish with chopped fresh parsley if desired.
  10. Serve warm and enjoy!

Notes

For extra flavor, try adding a sprinkle of red pepper flakes before baking or serve with a side of sour cream or garlic aioli.
