Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup Italian seasoned breadcrumbs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 2 tablespoons olive oil
  • Cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with cooking spray.
  2. In a shallow bowl, whisk the eggs until well combined.
  3. In another shallow bowl, mix together the Parmesan cheese, breadcrumbs, garlic powder, salt, and black pepper.
  4. Dip each chicken breast into the egg mixture, allowing excess to drip off, then dredge thoroughly in the Parmesan breadcrumb mixture, pressing to adhere.
  5. Place the coated chicken breasts on the prepared baking sheet. Drizzle olive oil evenly over the top of each chicken breast.
  6. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the crust is golden brown and crispy.
  7. Remove from oven and let rest for 5 minutes before serving.

Notes

For extra flavor, serve with a side of marinara sauce or a fresh green salad. You can also add chopped fresh herbs like parsley or basil to the breadcrumb mixture.
