This creamy Bacon Cheddar Gnocchi Soup combines crispy smoky bacon, tender potato gnocchi, and sharp cheddar cheese for a comforting, hearty meal perfect for chilly days.

  • 6 slices bacon, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 16 oz potato gnocchi
  • 2 cups shredded sharp cheddar cheese
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh chives, for garnish

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crisp. Remove bacon with a slotted spoon and set aside, leaving the bacon fat in the pot.
  2. Add diced onion to the bacon fat and sauté until softened, about 4 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Pour in chicken broth and bring to a boil.
  4. Add the potato gnocchi and cook according to package instructions, typically 2-3 minutes until they float to the top.
  5. Reduce heat to low and stir in heavy cream, smoked paprika, salt, and pepper.
  6. Gradually add shredded cheddar cheese, stirring continuously until melted and the soup is creamy.
  7. Return cooked bacon to the pot and stir to combine. Heat through but do not boil.
  8. Ladle soup into bowls and garnish with fresh chopped chives before serving.

Notes

For extra richness, add a splash of white wine before adding the chicken broth, or sprinkle extra cheddar and chives on top just before serving.
