avocado deviled eggs

Avocado deviled eggs are a creamy and nutritious twist on the classic appetizer, combining ripe avocado with perfectly cooked eggs for a fresh, flavorful bite.

  • 6 large eggs
  • 1 ripe avocado
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • Salt to taste
  • Freshly ground black pepper to taste
  • Paprika for garnish
  • Optional: chopped chives or cilantro for garnish

Instructions

  1. Place eggs in a saucepan and cover with cold water. Bring to a boil, then turn off heat and cover for 10-12 minutes.
  2. Drain hot water and cool eggs under cold running water. Peel the eggs and slice them in half lengthwise.
  3. Remove the yolks and place them in a bowl.
  4. In the bowl with yolks, add the ripe avocado, mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Mash until smooth and creamy.
  5. Spoon or pipe the avocado mixture back into the egg white halves.
  6. Garnish with a sprinkle of paprika and optional chopped chives or cilantro.
  7. Refrigerate for 15 minutes before serving for best flavor.

Notes

For added crunch, sprinkle with finely chopped crispy bacon or serve with a side of fresh vegetable sticks.
