Ingredients

  • 2 salmon fillets (6 oz each)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 cup cooked brown rice
  • 1 avocado, sliced
  • 1 cup steamed broccoli florets
  • 1/2 cup shredded carrots
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha sauce
  • 1 teaspoon lemon juice
  • 1 teaspoon sesame seeds (optional)
  • 1 green onion, sliced (optional)

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Brush the salmon fillets with olive oil and season with salt and pepper.
  3. Place the salmon in the air fryer basket and cook for 8-10 minutes, until cooked through and flaky.
  4. While the salmon cooks, prepare the spicy mayo by mixing mayonnaise, sriracha sauce, and lemon juice in a small bowl.
  5. Once salmon is done, assemble the bowl by layering cooked brown rice, steamed broccoli, shredded carrots, and avocado slices.
  6. Place the cooked salmon on top of the bowl ingredients.
  7. Drizzle the spicy mayo over the salmon and garnish with sesame seeds and sliced green onion if desired.
  8. Serve immediately and enjoy!

Notes

For extra heat, add a drizzle of sriracha over the entire bowl or swap brown rice for quinoa for a gluten-free option.
